A Guide to AirFood Recipe

An airfood recipe is a type of dish created by suspending ingredients such as bread, cheese, and fruit in the ubiquitous gas that surrounds us all — in the form of whipped cream or meringue. You can poke holes in your cake or bar, tie it up with strips of bacon for a quick and easy lunch, or fill it with maraschino cherries for a super-sweet dessert.

I first encountered airfood recipe as a staple of the hippie culture. The growing number of travel-oriented food magazines of the late 60’s and early 70’s included many “why don’t you ..” recipes for preparing food in the inflated atmosphere of a balloon.

The concept was just too good not to be more widely used. I’ve been playing with it for years, and have come up with my own variations. This is a list of ideas I’ve stolen from other sources, but mixed and matched to fit my own needs.

Suspend your food in the air.

Some of the best airfood recipes are those that are ready to start eating as soon as they are prepared. These types of foods can be particularly popular for breakfast, brunch, or hors d’oeuvres.

1. EAT IT ON A POLE:

For example, shave cold cuts directly on a stick. French-fried onion rings, donuts on sticks and chicken fries (strips of meat soaked in a light batter) are great choices for eating out of hand while walking around. Texas toast, rolls and pancakes also make good impaling choices. It’s fun to impale appropriate foods on skewers and barbecues.

2. MAKE IT INTO A SANDWICH:

You can make a banana split out of several thin layers of bread and fruit or ice cream, or create a s’more by sandwiching chocolate cookies with marshmallow and toasting them over a fire.

3. GOURMANDIZE IT :

Cheesecake is the classic example of this type of food. Fill a loaf pan with a layer of sliced strawberries and then cover them with cheesecake; this will give them their own fresh-baked flavor in the air.

4. ICING AND SCOTCH CREAM:

Cover cakes with meringue frosting, or fill a cake with an open torch and top it off with whipped cream.
